Peppermint Jelly

Servings: 2 pints

1.5 CUP(S) fresh mint
3.5 CUP(S) water
2-3 DROP(S) red food coloring
1/2 TSP lemon juice
1 1 3/4 oz box pectin
4 CUP(S) granulated sugar

Chop the mint leaves.
Place the mint leaves into a saucepan and add water.
Bring to a boil.
Remove from heat, cover and let stand 10 minutes.
Strain and measure 3 cups of mint infusion.
Pour the mint infusion back into a saucepan.
Add food coloring and lemon juice.
Mix well.
Add SureJell, and allow it to dissolve finally bring to a rapid boil.
Once boiling, add sugar.
Cook fast, stirring occasionally until it comes to a rapid boil that cannot be stirred down, then cook 1 minute more.
Pour into sterilized jelly glasses and seal in a steam canner for 10 minutes to ensure a good seal.
