Potato Chips

potatoes
vegetable oil
salt
ice cold water

Peel potatoes and slice potatoes as thin as possible.

Add all of the potato slices to a large bowl, add cold water water so that it just covers all slices and let sit for 30 minutes.

After 30 minutes, rinse potato slices and shake as much of the water off as you can.

Heat oil in a large deep skillet to about oil reaches 350 to 365 degrees.

Then line a single layer of potatoes on a cloth-lined dish.

Pat the top of the potato slices dry with a cloth or paper towel.

Working in small batches, add potato slices to hot oil and cook for 3-4 minutes stirring consistently with a slotted spoon until they begin to brown.

Once browned, remove chips and add to a paper towel lined cooling rack or plate and sprinkle with salt.

Be sure to let them cool in a single layer to ensure that they do not become soggy as they cool.

Special Notes:

These are amazing on their own, dipped in ranch dip, or onion dip.
I have skipped the soak time with no issues.
I have also added a little sugar to the soak water for a little twist.
