Bacon, Swiss, and Spinach Quiche

3 read made pie crusts
4 CUP(S) heavy cream
1/2 LB(S) bacon cooked
3 medium onions chopped
1 LB(S) chopped swish cheese
8 eggs lightly beaten
1 TSP salt
1/2 TSP nutmeg
1 PKG frozen spinach

Cook, strain, and chop spinach.
Cook bacon until slices are crisp and crumble on the bottom of the crusts.
Sauté the onions in 4 tablespoons of bacon fat and cook until tender.
Sprinkle the onions over the bacon.
Add spinach on top of onion.
Cover the mixture with the cheese.
Scald the heavy cream and add the beaten eggs, salt, and nutmeg.
Pour the mixture over the contents in the crust.
Place them in the oven at 450 degrees for 10 minutes and then reduce the heat to 375 degrees for another 20 minutes.
Remove the quiches and cool for 10 minutes before serving so that they firm up prior to slicing.
