Bacon Maple Pancake Bites

Servings: 48 mini muffins

3 CUP(S) flour
1/4 CUP(S) sugar
1/2 TSP salt
1 TBSP baking powder
2 1/2 CUP(S) milk
1 TBSP vinegar
2 TSP vanilla extract
2 eggs
1/4 CUP(S) butter, melted
4 OZ cream cheese, softened
1 CUP(S) powdered sugar
1/4 CUP(S) maple syrup
1 PINCH salt
12 slices bacon, cooked crisp and finely chopped

Preheat oven to 425 degrees.

In a large bowl combine the pancake dry ingredients: flour, 1/4 cup of sugar, 1/2 tsp. salt, and baking powder. Mix and set aside.

In a small bowl, combine the milk and vinegar. Stir and let sit for 1 minute. Whisk in the vanilla, eggs, and butter.
Pour the wet ingredients into the dry ingredients and mix well.

Grease or spray mini muffin baking pans.
Fill the cups with batter to â…” full.

Bake for 9-10 minutes or until lightly golden brown on top.

For the icing, in a small bowl, mix the cream cheese, powdered sugar, and maple syrup until smooth.

Once the muffins are cool enough to handle, dip the tops into the icing and then the chopped bacon.

Special Notes:

Serve warm with remaining icing as desired.
You can use your favorite pancakes and just make the icing if you like.
Sometimes l use square mini muffin pans... it gives the elves an extra delight. =)
